🍲 What Is Budae Jjigae?

Budae jjigae, or Korean army stew, is a spicy, hearty dish born from post-war fusion—combining American ingredients like spam and baked beans with Korean staples like kimchi and gochugaru (chili flakes). Simmered in rich broth, it’s a one-pot comfort meal packed with flavor and history.

🧑‍🍳 How to Make It (Detailed Recipe)

⏱ Prep & Cook Time: 30–40 minutes
🍽 Serves: 4 people

🛒 Ingredients:

  • 1.2L water + 1–2 tbsp beef bone broth powder
  • 300g sliced ham and bacon
  • 2–3 sausages, thinly sliced
  • 200g ground beef
  • 1 can baked beans
  • 1 cup chopped aged kimchi
  • 3 tbsp Korean chili flakes (gochugaru)
  • 2 tsp salt
  • 1 tsp beef bouillon powder (Dashida)
  • 1 tsp black pepper
  • 100g ramen noodles
  • 100g soaked glass noodles (dangmyeon)
  • ½ onion, 1 stalk green onion, handful of mushrooms

👨‍🍳 Instructions:

  1. In a large pot, combine water and beef bone broth powder. Bring to a boil.
  2. Add ground beef, chopped kimchi, and baked beans. Simmer for 5 minutes.
  3. Stir in gochugaru, salt, beef bouillon, and pepper to season the broth.
  4. Add sliced ham, bacon, and sausages. Let it simmer for another 5 minutes.
  5. Toss in ramen noodles and soaked glass noodles. Cook until soft (about 3–5 minutes).
  6. Add vegetables—onion, green onion, and mushrooms—and simmer until everything is cooked through.
  7. Serve bubbling hot. Optional: top with cheese or rice cakes for extra richness.
